I had some doubts to mention a Talisker 25Y old, wich is a nice 25Y old if you asked me. But decided not to do.

apart from that i believe i had an independent of old pulteney of 25 and i have the Glenfarclas 25 here at home open, im not very fond of it though. those are all the 25's i got so far.
Isn't bourbon supposed to age very quickly, thus getting TOO woody after a certain age?
Generally yes (I think VW 20YO has gone a bit too far) but this Bourbon defies science !! It's actually a very fruity mellow whisky.
Ken Webber at BT says that the degree of charring and the storage conditions (mainly how hot) are also major factors in the ageing process.
