To clean the palate, I would have some form of water biscuit or Jacobs cream cracker. The sort of plain biscuit you have cheese on.

Good to see you have Highland Park. It depends what you like. For Speysiders, you cant go wrong with Aberlour or Macallan. For Highlanders, try Brora ( bit pricey at 60 euros, and only available at specialists, but I think its a cross between, Glenfarcas and Laphrioag in a Highland Park styleeee ( said in a Ali G voice for all the UK web readers - hes a UK comidiean
r0b says Ardbeg, yes, but people 17yo is the best, I'm a 10yo... and its cheeper.
