I am about to get hold of a 50L cask which I plan on filling with (duty paid) whisky in the near future. What I'm wondering is, how long does it take for a cask to dry out (i.e how quickly will I need to fill the cask) and equally at what level can I realistically drop the cask to before I need to fill it up again (making it a living cask) or empty it and refill with a fresh batch of spirit.
I'm assuming at a certain level the evaporation from the liquid will be enough to keep the cask from drying out but below a certain level this wont be enough to stop irreversible damage.
