Some which have some heritage built around them, others with a great collection of beers and whiskies?
Grateful for recommendations.

Won't work--most of the malts bottled in 50cl bottles are quite expensive. It's a case of cut-the-size-but-not-the-price. Better to find full-size bottles within your budget. You may find the occasional half-bottle, but whether you find any such that are of interest to you is another matter--the selection will not be great.
If you want a structure that's steeped in tradition and history try the Ye Olde Chesire Cheese, http://www.squaremeal.co.uk/restaurants ... view/84362
A fascinating window into the Dickensian past, also one of the original meeting houses, like the Goose and Gridiron, of the Antient Freemasons.
